Block vs. Page builder
There are a lot of fundamental difference between block and page builders and they can help you create a site but in two different ways. This cannot be said for Elementor as it places its content on top of WordPress, so it might end up conflicting with some plugins, though it probably won’t be a common occurrence, but it can happen.

With Elementor you have a tool that is mostly self-contained this means that the things that you might need exits within the tool already. For Gutenberg it might be a bit more necessary to pair it with another plugin to get the most out of it, but there are a lot of plugins that will help you out there.
Another big difference between Gutenberg and Elementor is that Gutenberg is completely free where Elementor has both free and paid versions. If you want all of the functions of Elementor then you might need to pay for the subscription. Gutenberg doesn’t have any cost, but it can end up costing you a little bit depending on what plugins you end up adding.
Additionally, Gutenberg doesn’t come with any support other than what other users might help you with, whereas Elementor has support since you pay for the services.
